I made this delicious apple and ginger cake the other day!
I truly am a big believer in using up left over fruit that has sat in the fruit bowl maybe a little too long! NO one touches it.... still super tasty BUT just doesnt look right - we are all guilty of it, right?!
SO here is a super easy apple and ginger cake that you can throw together in no time. Afternoon tea sorted.... Freezes well too!
4 grated apples
1/2 cup vegetable oil (I love grapeseed oil)
2 cups of flour (sifted)
3/4 cup of cane sugar
3/4 cups of walnuts (crushed) NB# optional
2 eggs (well beaten)
2 tps vanilla
2 tps baking soda
2 tps cinnamon
1/2 tps salt
1 tps of maple syrup
2 drops of Doterra GINGER essential oil
Grate apples - skin and all.
Beat two eggs well, add sugar beat then add sifted flour and the remaining ingredients! EASY AS>
