I absolutely love this cake. Its delicate, sweet (but not to sweet), light and always a winner to finish the evening off. During my global travels I was working in an amazing restaurant in Wanaka, New Zealand to make ends meet. Snowboarding and shooting photos by day and working a few nights a week overlooking the divine lakeshore of Wanaka where the towering snowcapped mountains were our backdrop. This recipe was given to me from the owner, over the years I have adapted it to make it my own however the added delicacy of this not so ordinary orange cake is in the boiling off the oranges to make it lighter and more elegant in flavor. Its a personal favorite in our home. I love it with some greek yoghurt and a dash of honey on the side. Enjoy! X
Flourless Orange & Coconut Cake.
2 large oranges
6 eggs beaten
250g ground almonds
2 tsp Baking powder
Bring oranges to boil and simmer for 2hours occasionally give them a turn.
Once cooled, remove rind, pips and chop finely or blend.
Beat eggs and slowly add sugar. Follow with remaining dry ingredients.
